aka Amber Fox Kitchen Quiche Lanark Gathering '99 & Work Weekends '00, Martha Bear serves whomever shows up for breakfast Shopping List: two farm-fresh eggs; 1 cup table cream; 1/2 cup shredded cheese (medium cheddar works best); 1 tsp. marjoram (pref. not ground); 1 tsp. savory (again, pref. not ground); 1/2 tsp. black pepper. NB: It is the duty of the thunderously hung bearboy to prepare the pastry for the quiche. Substitute his surefire pastry recipe here. The Dish: Preheat the white oven to 350 F, or a close approximation thereof. Sprinkle shredded cheese around the bottom of your pastry shell. In a bowl, whisk together eggs and table cream until mixture is a uniform color. Pour mixture into pastry shell, then sprinkle marjoram, savory and pepper over the top. Don't add spices while you're whisking, or you'll have a green quiche! Icky-poo! Sling into oven and bake for 20-25 minutes, or until pastry is well browned. Remove, and then allow to cool for 10-15 minutes before serving. This can also be a main course dinner dish with the addition of one small red onion, sliced and quickly sautéed in olive oil. The onion must be sautéed, or you'll have a soggy purple quiche. The onion can be added to the pastry shell at the same stage as the cheese. Or: try steaming 1/2 cup finely-chopped broccoli, and add that. Again, steam the vegetables or be damned! |
