Meaningful Peaches
When peaches are perfect and cheap at Patenaud's, this is a good dessert
to use them up. Downside is that you have to cook them right before
serving.
For every four servings:
- 4 peaches sliced in half, pitted, peeled if you wish
- 2 tbsp brown sugar, or white sugar, or maple syrup reduced down
to a thick goo
- 1/2 cup cream (whipping cream or table cream are both fine)
- 2 tbsp butter
- melt the butter in a large frying pan, fry the peaches cut side
down for a minute or two (They should be warmed through but not begin
to disintegrate)
- take the peaches out and arrange them on serving dishes; leave
the butter & peach juices in the pan
- if using sugar, add it to the butter and fry until it just melts
and starts to carmelise; if maple syrup, add it to pan and heat until
it bubbles
- add a tbsp or two of cream to the pan and stir like crazy; it will
spatter hot sugar, so wear clothes
- add the rest of the cream all at once and keep stirring until it's
bubbly and reduces a little
- pour this over the peaches
