Curried Peas
- 2 tbsp fat to fry in (ghee, butter or veg oil)
- three cloves of garlic, minced
- 1 one-inch chunk of fresh ginger, minced
- 1/4 tsp of salt if desired
- 1 medium onion, sliced
- 1 tbsp or more of curry powder
- 1 cup of stock or water
- 1 kg (about 2.5 lbs) of peas
- fry the garlic and ginger in the fat until aromatic and starting
to colour
- add the onions (and salt if you want), fry until transparent
- add the curry powder and fry briefly until aromatic
- add the stock or water, stir, bring to the boil
- add the peas and bring to the boil, stirring occasionally until
the liquid is reduced to a thick sauce (about 10 minutes)
You can also add cubes of tofu to this near the end of the cooking
time. |
