Curried Peas

  • 2 tbsp fat to fry in (ghee, butter or veg oil)
  • three cloves of garlic, minced
  • 1 one-inch chunk of fresh ginger, minced
  • 1/4 tsp of salt if desired
  • 1 medium onion, sliced
  • 1 tbsp or more of curry powder
  • 1 cup of stock or water
  • 1 kg (about 2.5 lbs) of peas
  1. fry the garlic and ginger in the fat until aromatic and starting to colour
  2. add the onions (and salt if you want), fry until transparent
  3. add the curry powder and fry briefly until aromatic
  4. add the stock or water, stir, bring to the boil
  5. add the peas and bring to the boil, stirring occasionally until the liquid is reduced to a thick sauce (about 10 minutes)

You can also add cubes of tofu to this near the end of the cooking time.
